The rich, rolling pastures of Wilmot Township in Ontario provide the foundation for every wheel we produce, where our own herd of dairy cows graze on nutrient-dense crops grown directly on our farm. This intimate connection to the land allows us to capture the essence of our terroir, transforming pure, farm-fresh milk into the traditional Gouda-style cheeses that have become our hallmark. By controlling every stage of production—from the soil where we plant our seeds to the final natural aging process—we ensure a level of craft that results in an unparalleled depth of flavour.

Our journey began in the historic heart of Dutch cheesemaking and continues today with a commitment to both heritage and innovation. Adam van Bergeijk, a trained master of the craft, brings decades of expertise to every batch, ensuring that our signature Farmstead Gouda maintains the delicate, creamy profile of a true European classic. This dedication to quality extends to our more adventurous offerings as well, such as our Black Truffle flavoured cheddar, where the earthy, sophisticated notes of truffle meet the pristine quality of our farmstead milk.
