At Matt’s Quality Meat Co., we have mastered the art of biltong—a centuries-old preservation technique that stands in stark contrast to mass-produced jerky. We believe in the integrity of the protein; our process begins with premium Canadian beef, which is marinated in cider vinegar and a precise blend of toasted coriander, black pepper, and clove. By air-drying our steak for up to ten days rather than cooking it, we preserve the natural tenderness and deep, complex profile of the meat. Our signature product, Matt’s Original Biltong, is entirely free of sugar, gluten, and nitrates, offering a pure, high-protein experience that honours the heritage of the butcher’s trade.
