Malty & Hoppy Delicacy

Toronto-based Malty & Hoppy Delicacy is transforming Ontario’s vibrant craft beer and cider scene into a collection of refined, gourmet preserves and condiments. Originally from the renowned Burgundy region of France, founder Françoise Briet brings a “French twist” to her artisanal creations, which include beer jellies, savoury spreads, and artisan mustards specifically designed to elevate cheese and charcuterie boards.

Françoise’s path to the kitchen is truly unique. With a Ph.D. in nutrition, she spent decades in clinical research and global food security before shifting her focus to the culinary arts. Her expertise was further refined during her four years serving as a private chef for the French consul in Toronto. Today, she blends science, tradition, and creativity to produce award-winning preserves and condiments—many of which have been recognized at the Royal Agricultural Winter Fair.

Every jar is a tribute to local “terroir.” By partnering with Ontario’s best local breweries, Françoise captures the complex profiles of IPAs, Stouts, and Pale Ales, balancing fruit, acidity, and bitterness to complement both soft and aged cheeses. These low-sugar, eco-conscious preserves often feature unexpected ingredients like black garlic or coffee, resulting in a gastronomic experience she describes as “where beer meets cheese.”

Beyond the stovetop, Françoise is a leader in the culinary community, serving as the co-president of the French chapter of Canadian Women in Food. Her work is inspired by her grandmothers—one a professional chef and the other a master of preserves—ensuring that every batch of Malty & Hoppy Delicacy carries the legacy of French culinary excellence.
